- 2 lbs chicken thighs - (or use chicken breasts) bones removed and cut into small pieces
- ½ cup plain Greek yogurt - (or plain coconut milk yogurt)
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 2 teaspoons ginger purée - (squeezable minced ginger)
- 2 teaspoons paprika
- 2 teaspoons chili powder
- 2 teaspoons garlic powder
- 3 teaspoons ground turmeric - (1 tablespoon)
- 1 teaspoon ground cumin
- fresh cilantro leaves and lime juice - for serving

INGREDIENTS
Chicken
- 2 lbs. boneless, skinless chicken breasts or thighs cut into 1" pieces with fat removed
- 1 cup plain yogurt low-fat is fine but don't use non-fat
- 2 Tbsp. lemon juice fresh squeezed
- 1 Tbsp. minced garlic
- 1 Tbsp. grated or minced ginger
- 2 tsp. garam masala
- 1 tsp. salt
- 1 tsp. cumin
- 1 tsp. turmeric
- ½ tsp. black pepper
Vegetables
- 1 red pepper seeded and cut into 1" pieces
- 1 red onion cut into 1" pieces (save small inner part for another recipe)
- 2 medium zucchini sliced into ½" rounds

- ½ cup low sodium soy sauce or tamari or coconut aminos
- 1 Tbsp. rice vinegar
- ⅓ cup coconut sugar or brown sugar

- 2 garlic cloves grated or finely chopped
