Red, White and Blue Popsicle Recipe By Acute Designs

Hey Julie Ann Art readers!  I’m Gina from {Acute Designs} and I am so happy to be here today to share with you guys a fun recipe for red, white, and blue popsicles.  These frozen treats are perfect for the upcoming 4th of July or any hot day this summer.

Also, if you concern yourself with being healthy, they are low fat, full of good for you fruit, and less than 100 calories each.  Go ahead, have two, you really can’t go wrong with these!

Red, White, and Blue Popsicles {makes eight popsicles}
*2 cups of sliced fresh strawberries
*2 cups of blueberries
*2 cup of low fat vanilla ice cream or frozen yogurt {I used 1 cup vanilla greek frozen yogurt and 1 cup blueberry for the “blue” layer}
*Popsicle molds {I bought mine at Target} or small paper cups and popsicle sticks.

1. In a small food processor or a blender, blend 1/2 cup of ice cream with the sliced strawberries until smooth.  Carefully pour the strawberry mixture into the popsicle mold or paper cup ~ filling 1/3 of the container.  Be careful not to let the mixture get on the sides of the mold or else the three colors will blend together.

2. Once the strawberry layer has been set, put the molds in the freezer while you work on the next layers.

3. Clean the food processor, then mix the blueberries with 1/2 cup of ice cream.  For this layer, I used blueberry frozen yogurt.  Set the blueberry mixture aside.
4. For the “white” layer, let one cup of plain vanilla ice cream or frozen yogurt sit at room temperature until soft.  Stir the ice cream until you have a slightly creamy mixture.  This will make it easier to put into the molds than straight frozen ice cream.
5. Pull your pops from the freezer and fill in the “white” and “blue” layers.  Top the bottom of each popsicle with a few blueberries.

6. Put the sticks in the popsicles and freeze overnight.  When you are ready to eat, it helps to run the popsicles under warm water before easing them out of their molds.

If you are a dairy-free eater, try using coconut milk ice cream…the strawberry one at Trader Joe’s is my favorite.
